I printed this .jpg out and taped it to the inside of the door of my spice cabinet. Makes for an easy and quick reference for quick marinades. :)

I slice horizontally, then pound, then marinate boneless chicken breasts, with a combo of evo and vinegar or lemon/lime, throw in some spices (fresh herbs when in season).
 
I marinate my own chicken always, and I bake it because we don't have a grill. Sometimes I put boneless, skinless chicken breasts in the crockpot with a marinade and let it cook for 8-10 hours on low. The chicken just falls apart.
 
Oh boy, chicken, a topic of conflict in my marriage.
I'm old enough to have lived through the 1973 beef boycott. I was 16. My mom's menu shifted heavily towards chicken. She did finally expand the menu to other non-meat meals like fried egg plant, but I am STILL burned out on Chicken nearly 50 years later.
My wife could literally eat chicken every night. She works very hard on different ways to fix it, but I do not think she has ever marinated it. To be honest, I wish she would just BBQ or Oven Bake it, because I can deal with that.
Of course, I could eat ground beef every night. Hamburgers, tacos, burritos, spaghetti, meat loaf, meat balls are all entirely different meals to me, LOL.

Unless the chicken is getting some kind of sauce on it (bbq, tandoori, sweet chili, marinara, etc) it gets marinated.

I marinated chicken to be BBQ'd a few weeks ago and the friend "manning the grill" added BBQ sauce to it. It seems anything he BBQ's gets BBQ sauce. He even put it on the hot dogs we had.
 
One of my favorite "marinades" is to simply pour Ken's low fat Italian dressing over the chicken and VOILA! Marinates in no time!
 
My most requested marinated chicken is this one, with thinly sliced boneless skinless chicken thighs. I like to grill it in the summer, but it's fine cooked on the stove as well. I grill on a mesh grilling rack to keep pieces from getting lost.

I prefer chicken thighs to the recommended pork because it's lighter, but do make it with pork sometimes too (shoulder, not belly. You can't use super lean pork or it would be dry, but belly is just too much for me in most dishes). Recommend Haechandle brand gochujang. I leave out the pepper flakes and chili unless my kids are coming home to visit, because my husband is kind of a lightweight when it comes to spicy food.
 
Our favorite marinade is Rosemary Ranch Chicken. My grown nephew has told me this was the best thing I ever did for the family was bring it to us via allrecipes. :laughing: Thanks, kid.:rolleyes2 (seriously, it made me laugh because he loves this meal so much and it is EASY!)

Key tip: Half the salt!!! Don't use full amount recipe calls for. :sad2: We serve with white rice and fresh sautéed green beans.

ETA: Reserve some of the marinade before adding chicken so you can drizzle on top of chicken and rice before serving. ::yes::

I will second this recipe. It is my favorite way to cook chicken and my favorite thing on the grill and one of the two recipes I make over and over again from all recipes. I make a bit extra to top salads with for a few lunches afterwards. We are having it tonight with corn on the cob and tomato salad.
 
Sometimes we marinate chicken if we are grilling. If adding to a dish not very often. Always marinate steak...
 
I feel chicken has to be marinated because chicken is so blah. It needs marinated to make it good. Just seasoning the outside and cooking doesn't cut it.

I'm not much of a fan of chicken. I prefer pork and eat a lot of pork chops. Pork tastes like pork and I can eat it with a simple dusting of seasonings and tossing it on the grill.

Steak doesn't get marinated ever because it comes from someone's back yard, doesn't cost me anything, so it's all Ribeye and T-bone/Porterhouse which would ruin it if marinated. "Cheap" cuts of steak is in the hamburger.

I did just grill up a rare London Broil because he usually doesn't have that cut done. I made the mistake of not marinating and just seasoned a few hours before hand. It was still good, not real good eating it straight as a steak, but I sliced the rest thin and had a sandwich the next day on a good bun and it was mouth watering.

See, that's how I feel about chicken also, not because of my mother, but because of being married. She made chicken all the time. It wasn't until about the last 5-6 years her dad started raising beef.

After we started raising beef, she nor my girls ever wanted the steaks but we plowed through ground beef. Lot of spaghetti as I have Italian blood but my ghostly white Irish redheaded wife also loved it to death. Just about every night was either boneless skinless chicken breast or spaghetti which we doctored up pretty good.

Excuse the dumb question but how could I enlarge it to print. I see it's a jpeg but won't let me print any larger. Bear in mind, I'm old and semi-tech challenged, especially when it comes to pics from internet.
 
I marinate chicken often. In the colder months, I bake it. Otherwise, it goes on the grill.
