Are shuttles or taxis available to take from the pier to town and back? What time do the stores open in the morning?

The town is very small and right at the port. No need for a taxi.

Juneau is the only port that needs a shuttle. Disney provides them. They run every 15 minutes from port to the start of town.

As others have said, you really don't need a shuttle or taxi, it would probably take you longer getting in and out than walking to the Main Street.
As for the stores, from my experience, most usually go with cruise time, they'll be opening up as most people are getting off the ships in port that day, however there are a few exceptions, but there will be some places open early.

If I remember correctly - it's only a 3 minute walk from the pier to the town.
