Flights were much cheaper with an extra day on the front end of our trip (like by $200 for our family) so we need to do a single night somewhere. Where should we stay for just one night in the Orlando area without park tickets?

There are a few good Hotels / Motels at the junction of Hwy I-4 & Hwy 27 ( going North on Hwy 27 )

Take the 417 from airport and head West to join I-4 heading for Tampa .

Next morning turn back to the Junction of I-4 & Hwy 27 and head for Disney .. 15 min away.

The Hyatt at the airport if your flight gets in late. Or the Hotels across the street from Disney Springs if you get in by late afternoon. There is a walkway over the road now to get to DS from those hotels. Hilton Lake Buena Vista is one.
Or....my favorite Disney Resort....Port Orleans Riverside.

Pop Century was only 107 for the night...am I gonna do much better than that going off site? I'm thinking it might be worth it (even though we get in late and won't go to a park) to just go ahead and be on site so we can be at the parks for rope drop the next day. Thoughts?

Yes....POP is cheaper than POR by a few bucks. That's what I would do....get a Value on sight. I have done this at either Values or my favorite POR many times. Disney will transfer your luggage. When you get back from the parks and check in you just call bell services for your luggage. You have to be in your room to get it. Also, no rental car needed since Disney Magical Express will get you to your resort from the airport at no cost.

Honestly, it's difficult to answer that question without a date. Non-Disney hotels tend to have a much greater range in prices. For example: I've paid as low as $61 for the Hilton Lake Buena Vista across the street from Disney Springs. When I priced that same hotel for a last-minute trip this coming week, the rate was $289.

Some off-site hotels are about the distance to some of the parks as Disney's Pop Century resort. (In fact, I wouldn't be surprised to discover that some are closer.) Will you have a car? If you will not, staying at Disney resort would certainly be the easiest option. As Ensusieasm notes, Disney will transport your luggage from one resort to another.

If you will have a car, it might be worth it to stay at an off-site hotel...particularly one that includes breakfast. Depending on the size of your family, not having to pay for breakfast separately might be worth a slightly longer drive to a park that first morning.

Where are you staying? Are you staying at Disney or offsite? Will you have a car?

That's the tough thing. My DH and I will stay off site. My kids will probably stay with my mom at All Star Sports. We will have a car. So, my luggage and Dh's luggage needs to go to our off site resort while the kids' stuff needs to go over to the All Stars.

Why not just get a room only rate at All Star Sports?
