Single adult riding with 2 kids under 7

This will be my first time to DL and first time my middle child is tall enough to ride most rides.which rides are a problem for a single adult and 2 young children under 7, since they cannot "ride/sit alone" yet? I know at DW rides like 7dwarves are an issue for seating but need to know which ones to plan around for DL. Thanks!
 
I have twins and an older kid, so I can tell you some, but probably not all. Most height requirement rides will have issues, but it sounds like you won't be going on the ones with higher height limits, so most should be okay. In terms of other rides, I've found you can sit 3 across on almost anything. Astro Blasters will be an issue only due to there only being 2 blasters on the ride. Roger Rabbit is a tight fit depending on how big everyone is. I've run into more issues at DCA than Disneyland with this issue. Jumpin' Jellyfish requires a parent to sit next to any kid under 7, so you won't be able to do that one with 2 kids and 1 adult. Same for the Silly Symphony swings due to the nature of the tandem chairs. TSMM can also be an issue with seating 3 as can the bumper cars in Bug's Land.

The good news is that almost everything without a height requirement of any sort will be fine.
 
Thanks. I guess I should clarify a bit. There is actually 5 of us total. But with a young infant, baby and I won't be riding as much as the older two. So wondering which rides my husband can't take the older 2 on alone. They are 39" and 45" tall for ride restrictions reference. I think that leaves the younger one out of most the height restricted rides unless he has a growth spurt in the next 2 months.
 

I'd love to know about the 40" rides too just to plan ahead. Fingers crossed he'll grow enough for RSR as he loves Cars. I know Star Tours and Soarin are ok for 3, but I'm not sure about the rest. Will 3 really fit in Luigi's roadsters? Or Gadget's coaster?
 
Autopia is another attraction that might pose somewhat of an issue for three riders. Guests must be at least 54" to ride alone (along with the age requirement), which means if you DH takes both children, only one will get to "drive". Space Mountain also has a 40" requirement and the rows are two seats across. I'm not sure how the CMs would treat that one (whether being in the same car, but different rows is okay or not).
 
The Golden Zephyr of all things is odd this way because only two may ride per seat. I think the older child must ride directly in front or behind you and the adult must ride with the little one. I am trying to remember how it happened, I just remember my 6 year old niece had to sit alone and wasn't terribly happy about it.

CMs have allowed us to put the kids in front of the adults for Space Mountain. But the OP's younger child won't make the height requirement for Space.

This is good to know. I've heard they won't allow this for 7 dwarves at DW if both are under 7. We don't go till Feb so there is a chance he'll be tall enough, so I want to know all our options.
 
Im not sure why you and baby won’t ride. Most of the rides your LO can go on baby can too.
Nap and nursing breaks. I enjoy just sitting and taking in the atmosphere, older kids, not so much. Heck at DW I've ridden Barnstormer with my eldest with a FP and walked back in the time it took my husband to change a diaper and clothes for our second.
If they want to ride something while baby and husband or I take a break, I do not want to wait in line just to find out we can't get on due to seating layout. Also when we will ride with rider swap, if 1 adult can't ride with both big kids together I'd like to know to split the swap. If 3 can ride, then when we rider swap both adults get to experience the ride with both kids.
