I can only answer about the ones in the Studio's as I haven't seen any of the new shows in the Magic Kingdom.
She'd probably love Stich Live! Playhouse Disney Live! and Animagique in the Studio's.
The Star's n Car's parade was really good for Kacee (2yr old boy) but then he loves Toy Story so anything involving Woody and Buzz is heaven for him.
If you are going during the Summer months then the High School Musical Show should appeal to her but I haven't seen this so can't really comment too much.
The new Playhouse Disney show will probably go down really well. We were lucky enough to see it on a couple of test shows last week and my (almost!) 3 year old loved it and wanted to go back constantly. He adores the Stitch Live show as well.
i brought my dd who was two to most of the shows on our last trip. she loved everything. she loved the moteurs show even though i thought it dragged on a bit lol
I don't know if this is still on, but if it is I would say the Winnie the Pooh and friends too- show.... Perfect for small children It was in Fantasyland when I saw it.

We saw the Winnie the Pooh show at Christmas and thought it was awful. Every child in the place was bored, crying, restless and most left early. I don't know if we were just unlucky but it was woeful.
I thik you may have been unlucky, we went on the 14th December to the 10:30 showing and every child in there seemed to love it. Kacee certainly did. It was a good show for the kiddies but a little childish, I think kids over the age of about 3 or 4 would start loosing interest unless they are die hard Winnie the Pooh fans.
The Lion King show has finished unfortunately as it was one of my favourite things at DLP. Im not sure when Tarzan starts but its usually only on in summer
When we were there last weekend they had put up a huge screen in the theatre, and the 2 little screens which were at the side of the Lion King stage were still there also, and they were showing cartoons in there. Obviously it doesn't compete with the Lion King but it was actually quite nice to sit on the bench seats there and have a snack and a rest while my two watched the cartoons - they always love the cartoons in there anyway so for them it was actually an improvement on the Lion King which they find rather boring!
