My ADR booking window opens in 2 weeks but the show schedule is only listed until beginning of February. Are WOC and Fantasmic offered every night? I want to book the dining packages but I'm not sure which day we should be in each park. We are visiting for 2 days and only visiting one park each day, no hopping.

The ADR window opens at the 60 day mark even though Disney doesn't always have the entertainment schedule posted.

There is no set pattern to follow regarding these shows.
Disney has mixed it up a little this year. So it's hard to tell.

If you're wanting to see both WOC and F!. Figure out which days and go online to book.
WOC requires Payment IN FULL at the time of the reservation.

If you're looking for recommendations of what to do, it would help to know....

We will be there 3/15 and 3/16, my main concern is getting the dinner reservations booked. Can I book one at each park for and then when they release the schedule I can cancel the ones I don't need? So essentially I would start with 4 dinner reservations for the 2 days.

When I tried at the 60 day mark to book 2 dinner reservations, I couldn't...
To book 2 dinner reservations on the same day, you'll need two separate accounts.
Doing it this way will get you what you need, until you decide what you want.

It might give you an idea of hours and entertainment schedules for your dates.

When I tried at the 60 day mark to book 2 dinner reservations, I couldn't...
To book 2 dinner reservations on the same day, you'll need two separate accounts.
Doing it this way will get you what you need, until you decide what you want.

I've only booked ADRs for WDW this is our first visit to DL. The historical hour thread didn't help a ton as it looks like fantasmic wasn't showing last march? I saw some times for WOC. I guess I'll just have to wing it or make two accounts. If I pay in full for 2 WOC dinners, am I able to cancel one for a refund? Within reasonable time of course
 
I would do WOC Thursday and F! Friday, assuming you also want to view the fireworks (which will likely run on 3/16, weather permitting, but not 3/15). What else are you waiting to see on the schedule to help determine your dates?
Obviously the schedule early 2018 is a little different because they are running F! nightly (probably in place of a parade). Even if that schedule changes by your dates it won’t really affect the above recommendation because WOC typically operates nightly and F! on weekends. Of course, with the DCA pier updates, it could affect WOC, but when your adr window opens up, if you’re able to book the reservation then it’s safe to say those performances will happen those dates.

Test Disney's website for booking routine now to see what you'll need to do.
Book a Thursday and Friday for F! and WOC, just as you would if it was 3/15 and 3/16.

I should clarify...
You will only pay IN FULL for a WOC Dessert reservation, not a dinner reservation.

Yes if there is one showing of F! then they usually play right after. You can stay put and watch them over the water. There probably wouldn’t be time to go watch them at the castle due to the crowds. If there are two showings of F! they play in between.
