I booked a 2 bedroom unit through Marriott Bonvoy. When it is time to leave is it like a hotel—just leave, or will I have to strip beds, take out trash or other things?

We always load the dishwasher and turn it on, throw out the trash, but other than that you’re good to go. You don’t have to strip the bed. Sheraton Vistana is our favorite hotel in Orlando, you’re going to love it.
 
They do have a room service department although it doesn't come out every day. We left the apartment as tidily as we could and tried to ensure we had done a dishwash and took out the trash - it felt like home for 10 days and that felt natural. But we didn't strip the beds or anything like that. I think you can assume they have someone come out to clean and set the room up just as they would in a hotel. We certainly never heard anything to the contrary.
 
Also the garbage cans are generally outside each building. You’re going to have to take out your own trash (they provide trash bags). You can request more of anything (soap, garbage bags, tissues, towels, etc) by just calling the front desk.
