Haven't stayed at the Sheraton LBV. I love the Residence Inn SeaWorld though and it's my go to place in Orlando when doing a hotel instead of a condo stay. I usually request to be close to the breakfast area, so I'm closer to all the amenities. It's a big place. It's recently remodeled and they did a really nice job. I loved both my studio and my two bedroom (last two stays). The buffet breakfast is great. We like it that if you don't want to go out that they have good offerings for dinner that we think taste good and are reasonably priced for a hotel. The pool area has a nice tropical feel and there is a large hot tub which is really nice too. I also, even though we don't do much cooking on vacation, enjoy having a kitchen (especially for my son) for snacks, etc.
If you are going to SeaWorld, you can if staying there get free quick queue passes too to get one time front of line access to a bunch of attractions (kind of like Disney fastpasses or Universal Express pass) as they are a SeaWorld partner hotel. Just ask the concierge for these the night before your SeaWorld day or days.
I picked this place for a two night stay before going on a cruise out of Port Canaveral. DS and I did the Magic Kingdom and DH just hung at the hotel. He was happy reading by the pool and eating their for a big breakfast and dinner. It's not really walking distance to much of anything. That would be the one negative. But there is always uber.
