Nicole !!!!!!!! I found a recipe of a sticky toffee pudding online !!!:goodvibes from ECPT Rose and Crown

Ingredients

12 oz. dates, chopped and blanched

8 oz. hot water

2 tsp. vanilla bean

2 tsp. baking soda

1 lbs. all-purpose flour

2 tsp. baking powder

4 oz. unsalted butter

12 oz. sugar

2 whole eggs

1/4 tsp. salt

Method

1. Chop dates and add to hot water.

2. Stir in vanilla and baking soda.

3. Cream butter and sugar, then add eggs one at a time.

4. On low speed add half flour and baking powder and all of the liquid; mix until combined.

5. Fold in rest of flour to mixture.

6. Fill greased molds halfway and bake 15 minutes at 325 degrees F.


Butter Rum Toffee Sauce

Ingredients

1 oz. butter

4 oz. heavy cream

3 oz. dark brown sugar

1/2 oz. dark rum

Method

1. Combine butter, sugar, and cream; bring to a boil.

2. Remove from heat and add rum. Stir until all is incorporated. Serve hot.


Custard Sauce

Ingredients

8 egg yolks

3 oz. castor sugar

1 vanilla bean

½ pint milk

½ pint heavy cream

Method

1. Beat the egg yolks and sugar together in a bowl until well blended.

2. Scrape the insides of the vanilla pod, if using, into the milk and cream, add the pod too, and bring to the boil.

3. Sit the bowl over a pan of hot water and whisk the cream into the egg yolks and sugar. As the egg yolks cook, the custard will thicken.

4. Keep stirring until it starts to coat the back of a spoon, then remove the bowl from the heat and the pod from the custard.

Serve warm or cold. Stir the sauce occasionally until cool, to prevent a skin forming, or cover with greaseproof paper while it cools.

so far the 1st part of the trip is done... just debating which ADR is great for a White Party!!! 1st choice is O'hana.... or maybe Cape May... hmmmm
 
I'm sitting @home tonight feeling sorry for myself...DS lost his football game today, The Steelers lost and Diva Mary asked me to watch her daughters so she and her DH can go to Disney in November for his birthday...don't get me wrong, I love her girls and am happy to watch them (they are the daughters I will never have! :lovestruc ) but I find myself very jealous that she is getting to go back to Disney so soon :sad2:

I agree. Easier to go to a restaurant. Did I tell you we ate at the Rose & Crown and I didn't get my sticky pudding. :mad:

Hope it's a great Monday!

Got some good news already today :) Have been out of work since May, unemployment denied :( Appealed the decision - court date was a phone call and I was sitting in the room at SSR during the call, talking with judge - which helped to be relaxed ;) Anyway, appeal was reversed :), then this morning received notification of a 7 week emergency extension :) Unemployment would have ended today, so this is great news. ::yes::

No jobs in this little corner of world...but did see a sign in a Hallmark store window for "day time openings" so will drop off an application. Maybe they give a good employee discount? ;)

Sounds strange going to Disney without a job, but the trip was practically free and thought it would boost my spirits - turned out to be a very weird trip, but still came home smiling, of course. :)

It was strange that hoping to get down for a few days in December - short 3/4 ngts :)

Is it feeling like Fall where you are? LOVE Autumn - feels a teeny but like here because it's not in the 90's everyday. :)

So glad the extention will help you and I hope you can get that job at Hallmark.

Forget fall it feels like winter here to me since it is 55 degrees outside and anything under 70 is too cold to me. I welcome the warmth. The leaves are not changing yet here though which is beautiful.

55? Too chilly - Not ready for sweater weather. It has dropped to 57 at ngt here, but quickly warms up to the 70's - 79 today.

Back in Boston we would be taking one day at a time - one being very chilly, the next practically hot. We miss New England, but not the -13 degress day after day in the winter!

Christine, I am glad for your good news. I have friends in Hickory, as well as other NC areas and have heard it is hard round there, jobwise. I did see that some of the furniture jobs were coming back now that it costs so much to ship the work overseas. I hope so. My friends had to leave their home and move for work and want to return home so much. I like cooler weather too. Free Dining is good but no so much when it is soooo hot!!

Timmie, I had the sticky pudding this trip and loved it! It had always looked kind of ugly to me before. Glad I listened to all the good reviews. If only they had not messed up the pork loin dish. My husband had it last time and it had the best greenish sauce. This time it was a slice of loin with a dab of BBQ sauce, nothing I do not do at home. I was so disappointed!

Kristin, your day will come and she will be wishing she were in YOUR shoes. Bet she even wishes you were going with her this trip. Hang in there, do not despair. :hug:

Oh I know it will...I was just being silly, feeling sorry for myself...she and her family are supposed to be bouncing back with us next fall...I just hope this trip doesn't change that :sad2:
