Seeking ideas to mix things up for a quick trip this weekend

I'm taking our daughter for a 1:1 trip to Orlando this weekend, and since it's only 2 of us, I am wondering if there are any things we should look at doing since we won't be hauling around 5 folks? :-)

What is a hidden gem that people might overlook (in your opinion) and should consider?

Edited to add: We are Orlando veterans... we get there almost monthly it seems like, but rarely in small groups. Highly unlikely we will do Disney or Universal this trip, but we do have passes to SeaWorld, Lego, etc... we will be back over the summer with the whole gang to do Disney and Volcano Bay. She loves the water rides at SeaWorld, and her brothers hate them... so we will definitely be doing those.

I would want one memorable photo taken for keepsake. I think they have surprise Photopass at some locations. And I would definitely stop at the Photo Store on Main Street to make my decision. You can look at the pictures on the screen display together and ask for a border that might reflect a special memory or the date to be added. They also have a location in Disney Springs that offers more unique photo settings.

I edited after their reply to be more clear, they didn't know. I tried to be vague as to not limit replies, but I guess I needed to define the parameters...
 

the Orlando Eye and aquarium on I drive. You also may want to do Discovery Cove or Margaritavilles Islands h2o water park. We have enjoyed the Orange Co history museum which has a fabulous exhibit about WDW and it coming to Orlando

Can be anything, just looking for ideas, off the beaten path. We have done all the obvious stuff. Only parameter is we are talking about an 8 year old. No skydiving, lol.

I'll check out the museum. We have a "membership" to the science museum thru the museum passport, and haven enjoyed it. Aquarium/Tussaud's are fun and are included with Lego pass. Haven't done the big swing or the O-eye yet, though. Discovery Cove...my wife would kill me for doing it without her. Margaritaville water park high on the list of possibilities!
 
The Orlando Science Center is a lot of fun and should be accessible with your museum membership. We spent a LOT of time there when our kids were 7-10.
 
How about a nice afternoon tea? The Grand Floridian usually does it but I believe it's still closed. I think some of the other high end resorts on property like the Waldorf and the Four Seasons do it too if you want to check it out.

Also check out Orlando's Loch Haven Park. Inside of it is the Orlando Shakespeare Theater, Orlando Repertory Theater, Orlando Science Center, Orlando Museum of Art and a few other things. The Rep is specifically a theater for young audiences, aka a professional children's theater, and the Shakes often does children's shows as well (I worked at both of them!). Not sure if they have anything currently playing but it might be nice to check out for future trips. I haven't been to the science center but I heard it's a lot like other kid focused science museums around the country, but still, something different to do!
