Almost everything at Sea World is appropriate for adults without children. My adult siblings and I loved the park in January, and my mom and her friend loved it in February. We each spent three days of our trips there. My mother and her friend are in their late 50's and they had a wondeful time...even enjoying the rides. There are tons of animal exhibits to linger at in amazement, animal feeding opportunities, terrific shows featuring both animals and acrobats, fun rides (a water flume, coaster, movie/motion simulator, and a 300 ft. observation tower), free beer sampling, beautiful landscaping, great restaurants (better than most any other food you'll find at other theme parks), and some interesting shops. In short, everything at the park is appropriate for adults without children except for family area called "Shamu's Happy Harbor," although even the rides in that area can accomodate adults if you want to ride anything. My siblings and I enjoyed the Sea Carousel.
