Two over 50 adults going for first /probably only time. Three park days Mon 11/14 through Wed 11/16. Initial plan was to reserve DL, CA, DL. But I keep reading Mondays are busy at DL. Thoughts and advice?

I don't know. Even if it's busy, I just couldn't see starting any trip at CA unless that's just your favorite park. If you rope drop DLR, you'll get a lot done before 11am regardless of what day you're going there. To me the natural flow is bookending the trips with DLR and CA in the middle. Having never been to Disneyland, you really need to start at the one that began it all, in my opinion. Even if it's busy, you can just try to take it slow or plan your visit in a fashion to help make things run smoothly, even if the parks are busy. I think going when you are, you'll be okay.
My advice for any disneyland trip is to just go the days you wanna go and have a good plan. You will have identical offerings as those are all weekdays. Personally with three days I would do DL, CA, DL if I didn't have park hoppers.
