My son is going to visit a university in Florida for grad school. We were planning on extending it a day and bringing my daughter. Flights are crazy busy - not sure if this is an indication that the parks will also be crazy busy.

I wanted to get a picture of what it might be like on a Saturday. We have been to Disney many times, but never Universal. It would be disappointing to spend all our time in lines? Any opinions to manage our expectations?

I don't know what's going that weekend to make the flights so crazy but the park hours are 9-8pm that day. Which park are you looking at? The Studios will be busy in the afternoons because of Mardi Gras concert and parade that night. Pitbull is performing that night and the Studios will be packed! If you aren't a fan, avoid it like the plague. IOA shouldn't be affected by the concert but WWoHP will still be busy. The rest of the park should have moderate crowds.
