Looking for a yummy salsa recipe. I have tomatoes galore from my garden and want to make up a bunch of salsa this weekend.

Thanks!
Crista

Salsa

3 large tomatoes
1/8 cup chopped green onions
1/2 lime
dash of salt
dash of pepper

Chop tomatoes in fine pieces. Squeeze in the juice of 1/2 of a lime. Add the chopped green onion. Season with salt and pepper.

I don't really have measurements but here is mine

tomatoes
chilies
cilentro (sp?)
lime juice
balsmic vinegar
onion
salt

now i need to go make some :sunny:

my "on the fly" salsa uses a can of tomatoes, but I don't see why you couldn't use fresh:

1 can stewed tomatoes
assorted chiles ( I used 2 serranos 2 yellow chiles, and 1 jalapeno - next time I'll use more)
1 small white onion
1/2 bunch cilantro
lots of garlic (6+ cloves)
pinch of kosher salt

roast chiles over flame or in frying pan if you like

dump everything into a VitaMix or food processor and puree until blended.

DH doesn't like citrusy salsas so he really liked this one... :thumbsup2
