Heading to Universal Nov. 26-30, 2014. I have priced out staying at the RPR vs staying offsite at the Fairfield just off Universal Blvd and purchasing unlimited express passes.

Pricing is approximately $400 less staying at the Fairfield? It is a partner hotel so I still get the one our early admissions.

Am I giving up anything else (other than convenience) that is worth $400?

if you know you won't be changing anything on the reservation, you should be fine.
it's the package you need to book that can cause the headaches if you make changes.

are you renting a car or does the hotel have free shuttles that start early?
i don't stay offsite and not familiar with the Fairfeld.

My understanding is that it depends on how many days you need EP for and for how many people. The EP will probably be about $50pp/pd (just comparing standard P2P tickets to the ones with UEP on the universal website.) You are also travelling during a peak time where wait times will be higher also and EPS will be pricier.

Keep in mind you only get early entry if you book a PACKAGE with a partner hotel.
