So for our AK day, 12/19, I have a ROL lunch booked at Tiffins around 11:30am for the first ROL show, which is at 7:15pm. Yesterday an 8:30pm show was added with the park closing at 8pm. The Fastpasses for the 7:15pm show have been gone for awhile, there are Fastpasses now for the later one. I'm not planning on getting an advance Fastpass for the 8:30 show but would consider a day of one if it was available. I think I'd prefer the 8:30pm show. What are your thoughts? We wanted to eat at Tiffins anyway. I'm also wondering if the closing time is likely to stay 8pm.

1. If so, arrive standby at 7:40-ish.
If you book a FP for a late show like that, you won't have that third FP to use for other attractions.
2. If so, keep what you have.

Even if you decide to Standby or try for a ‘day of FP’ for the 2nd RoL Show, the Dinner Package pricing for Tiffins is a great price for appetizer, entree, and dessert. You may want to check the menu and pricing - we have noted they have made some changes sometime between May and September. Our Server said they keep adjusting the menu based on costs.
 

Funny...I am in a very similar situation...just a day earlier.

I booked the RoL pkg at Tiffins because the family wanted to see RoL, I wanted to eat there, I don't like having a FP tied up in an evening show, and after booking FPs...my FoP FP would be cutting it too close (IMO) to do standby for what was initially the only show that night. But now that they've added a second RoL show for our night, I'm really tempted to spread the magic and give my preferred seating to some strangers and go standby for the later show. I'd love a little extra time in Pandora at night to take some pictures and 7:40pm arrival for standby for the later show seems doable along with less rushing around stress. Guessing it will probably be a game time decision.
 
Today’s first show is 6:15 but our date in December is still 7:15. Do you think they will move it to 6:15 to?

No. On the days when they’ve added a 2nd RoL, the first is at 7:15 and the 2nd at 8:30.
 
I have some questions!

There are FP’s available for ROL the day we are there. I also have ressies for Tusker House but not the dining package. They do have the dining package availalbe for that night. Should I book that or the FP? We have the regular dining plan does the Tusker House dining package count as 1 or 2 credits?

If you don't mind booking the Dining Pkg. that will free-up the FP+ that you'd otherwise need to book for RoL.
Holding that late RoL FP+ would also keep you from being able to book any possible fourth or fifth day-of FP+ that same day.

Do you know if it’s one dining credit? I don’t want to waste two on it. Lol

Tusker House counts as one Table Service credit for the Dining Plan.
Tiffins counts as two Table Service credits for the Dining Plan.
 
I have a ROL ADR at Tusker House for 4pm. My ADR says we are booked for the 1st show. Any way to change to the 2nd show? Would I need to book an ADR for a later time?

Your Dining package voucher is only good for the 1st RoL Show. The 2nd Show is FP and Standby-only.

I was afraid the ROL package may use 2 credits at Tusker instead of the regular just one credit. It's so hard to find info on it, you think Disney would show it but I only saw that it said some dining plans accepted.

Similar to the popular “Fantasmic!” Dining Packages at Disney’s Hollywood Studios, the “Rivers of Light” Dining Package includes reserved seating at the new show. At all-you-care-to-eat Tusker House, you can choose the breakfast, lunch or dinner buffet on the day of the show (but you have to dine at least 2 ½ hours before the show). Breakfast is $39, $24 ages 3 to 9, plus tax and gratuity; lunch and dinner, $52, $32 ages 3 to 9, plus tax and gratuity.
Tusker House Restaurant is on the Disney Dining Plan and counts as one table-service meal.

At Tiffins, “Rivers of Light” Dining Packages are available at both lunch and dinner. Choose your favorite appetizer, entrée, dessert plus a non-alcoholic beverage. Dining must take place at least three hours prior to showtime. Cost is $67, $26 ages 3 to 9 plus tax and gratuity.
Tiffins accepts the Disney Dining Plan, and counts as two table-service meal entitlements.
