Any ride without a height requirement should be fine to do. If you look at this list, Height is listed first:

How would you hold a 10 month old on POTC? Just on your lap, facing forward? Just thinking of the drop near the end of the ride. Does a bar go across them? Can’t remember if there is a safety bar in front of you.

Assuming the DLP ride is similar to WDW, it's bench seating with no safety restraints. You hold a young child on your lap or if able to sit independently on the seat beside you with an arm around the child.

It is similar though the drop comes at a different time in the ride - it's pretty gentle. There are no restraints on the boat.

I don't believe POTC in Paris has a safety bar. Disneyland in CA doesn't either.
