Thanks for those hints! I think the spreadsheets will be a good supplement. Since we'll be there seven days during a peak time, it may be hard to do itineraries for every day.
 
Re worrying about planning too much (planning nazi!) You really can't plan too much especially if your kids are small. that doesn't have to mean mean filling every moment with rides, but planning your approach to the whole trip. We 've used ridemax, and my husband thought I was a geek too, but was quickly converted when he saw how well it worked. We also let the kids decide what they would like to ride, and how many times, so they can be involved in the planning too.

good idea! I have can have my 6 year old and 3 year old help decide what to ride since they are the ones who will be whining if we don't ride a certain something. I think they'll get a kick out of watching how Ridemax works.
 

Exactly! and for my slightly older kids, they could see the logic in following a certain order round the park, rather than just jumping on the first exciting thing they saw. They knew we'd get to it, and everything else they wanted to try.

The same logic (sort of!) applies to character meeting. By booking in to character meals, we weren't thrown off track by photo/signing lines (unless we watned to be!), becasue they knew they would meet characters at dinner etc. It's such an excitingplace for kids that they can also be a little overwhelmed, and these techniques help not only with seeing everything, but enjoying everything too.
