Restaurants that DO NOT need ADR's

It probably depends on what time of year you'll be there. During Spring Break or Christmas? ADR probably required almost everywhere. Other times of year? It depends.

Many of the restaurants at Disney Springs may have same day availability on OpenTable. Other than Raglan Road ( which seems to be a recent development) no other DS restaurants on OpenTable that I know of require a Credit Card. Plus if you can get a seat at the bar you could get to order from the full menu. I know people who have done that at Homecoming ( which is not on OpenTable) & Boathouse.
Unless a big sporting event is going on walk ups with maybe a slight wait are possible at ESPN Club.

Another vote here for Crew Cup Lounge in YC. Also, I haven't seen mention of Tutto Gusto Wine Cellar in EPCOT.

We went to Epcot without an ADR a few weekends ago and the only place we could walk into was 9 Dragons in China. But, that was on a Saturday night during F&W. You would probably have much better luck on a weeknight.

I would agree with others, I would at LEAST do it a couple hours in advance for same day, as some might not have optimal times, and you would need to tide yourself over with a snack :)

We make ADR's for about half of our dinners & play roulette w/ the other half. Late afternoon we'll pick a time we want to eat at- say 7:00 then see what comes up on MDE for that time. There are always a ton of ADR's available, sometimes a "big name" other times less popular places but always something. Bottom line-you won't go hungry in Disney! Enjoy your trip!!

I have an unusual request... I am looking for some great Disney restaurants that DO NOT need 180 day ADR's, where you could possibly get same-day reservations or walk-ups. I ask this because my fiance doesn't want to ruin our trip by having an agenda. He doesn't mind the Fast Pass system as it gives you an hour window however with restaurant reso's, if you're late, you could forfeit your table. THIS gives him anxiety and understandably he wants to reduce his anxiety during a vacation. If there is another thread like this, please point me in that general direction. Thanks in advance :)
Almost all of them. Not for walk up, never do that, you risk no meals. We rarely ever book at 180 days. Only for special circumstances. And we only eat at TS, at least once a day on all trips. We normally open the app and look at what's available when we are ready to eat, usually about an hour out. We've eaten at every restaurant on property at one time or another.

Via Napoli is the only one I know we have to do day before. They have a blurb about not taking same day somewhere.

Do you mean you can’t make an ADR at Via Napoli online day of?
If so, I wonder if that’s why it’s possible to walk in day of.
They even took walk ins on New Years Eve.

That's what I saw at one point when trying to make one day of. I've tried quite a few times and always same results. Now, it's one we do day before.
That could be why walk-ins worked. I never try that, too big a risk of a no and then I'm off searching for something else. Or maybe they always took them. Aren't the restaurants in Italy some of those ran by 3rd parties? I have given up trying to keep track of who is and who isn't at Epcot. Too many to keep track of. The 3rd party places have a lot more liberty with their policies
