we will be in Disney in January 2019, looking for dining options. We have 2 boys 12 & 6, not looking for character meals but something entertaining. Thinking of t-Rex or rainforest in Disney springs. Is there anything else in the area that's similar??

Non park meals?
Those are decent options for the experience (though the food won't blow anyone away).
California grill, though pricey, has a great view.

Park meals?
Coral Reef in Epcot is awesome especially if you're close to the aquarium tank. Some people don't like the food but we love it.
San Angel Inn is neat as it's inside the Mexico pavilion and the atmosphere is chill. Not your typical mexican food, so some people don't like it. (We love it).
Spice Road Table has bellydancers which the boys may like, though it could be embarrasing to them (all the more reason to go!)

Raglan Road has lively music and dancing.

I second Coral Reef, and if you are o.k. waiting a little longer tell them that you are willing to wait for a table close to the aquarium.

T-Rex and Rainforest both get mixed reviews, but then again so does Coral Reef. :)

Biergarten at EPCOT has very immersive decor, and a fun floor show: it's buffet style, so everyone can pick and choose. Yak and Yeti also has immersive decor and a fun backstory, and the food is consistently good.

Sci Fi Diner at HWS.......Raglan Road at Disney Springs....Sanaa at Animal Kingdom lodge [you may get a table overlooking the animals on the ''savannah'']....my son always loved Whispering Canyon Cafe at Wilderness Lodge

Whispering Canyon if they are still doing the fun stuff. CApe May for dinner if they like seafood

My DS and I go to WDW every year. He's 10 and for the last few years always has the same requests for dining, somewhat in order of his preference:

Yachtsman (his favourite food is filet mignon)
Garden Grill
Coral Reef
Beaches & Cream
Sci-Fi
'Ohana (breakfast)
Whispering Canyon Cafe
Hoop de Doo Revue
and what he classifies as "the usual character stuff' which for us are Chef Mickey, Tusker House and Crystal Palace

For boys ages 6 & 12, for sure SCIFI!!! My son is now a legal adult and still likes this place. He hated 50's btw, as a kid anyway. He didnt find it the least bit amusing to be scolded by the server. He said he gets enough of it at home. haha!

When my kids were teens they loved:

Sci-FI
T-Rex
If they are crab leg lovers, Cape May Dinner Buffet. They can stuff them selves silly with crab legs
Rainforest Cafe

They are so much fun with great good and atmosphere!

I know you said no characters, but I wouldn't discount Garden Grill breakfast.

For non character options, you've got some good ones listed here.

If you don't have a restaurant like it at home Teppan Edo can be fun (although there wasn't much personality to my cook when I went)

My family always enjoys Sci Fi, Garden Grill(it is a character meal but we love it!!), Cape May Cafe(AYCE crab legs!!), Trail's End( good buffet- good price!)

If they are eaters, then Biergarten is an awesome choice. Also, at Disney Springs D-Luxe Burger is sure to please any boys who like hamburgers, though it's counter service and not really themed (it's really good though!).

Satu'li Canteen is the new counter service at Pandora, but the food is a cut above. It's more like the Be Our Guest lunch in that you get real plates and utensils and there is a self-serve soda-fountain with free refills, so that can make it worth it. Boys are sure to dig the "Cheeseburger Pods" which are bao buns with what is essentially a McDonald's cheeseburger stuffed inside (a bit better quality though). They are delicious!

Other's have been mentioned for the theming, like Sci-Fi and Coral Reef, and those are both pretty good. There is also a Rainforest Cafe right at the front of AK (in addition to the one at Disney Springs), so you may consider that in your plans as well. I agree that the food there and at T-Rex is nothing special, but it's decent enough. The kids will like the theming at either.

We hated T-Rex. The lighting was headache-inducing, our entrees were edible, but not good, and the dessert was freezer-burnt, which was SO disappointing because I brought my sweet tooth to that meal.

Sanaa is #1 for both my boys (and probably me and hubby, too) because of the food and the animals. They love it so much they are begging our next stay to be in AKL. Mine are 5 and 7 years old. They also like all three character meals in the Magic Kingdom, but the only one that's for a reason other than food is Cinderella's Royal Table (they like the toy swords, and being princes for a meal).

If they never went to a hibachi Japanese dinner before, I would pick Teppan Edo.
