Resort day at CSR in May

Hi all-
We are doing a short trip from May 27-30 before our big summer trip in July. We are staying at Coronado Springs Resort (first time) and we get in at about 10:00 am on the 27 and we are not going to the parks on that day. I was hoping for a few ideas (thought of mini golf?) of things to do to fill in from around 11:30 am resort arrival until 7 pm dinner at Cape May Cafe. We may go swimming but we are like 2 hour max pool people. We have stayed on WDW property many times and usually are park commandos and actually slowing down and enjoying a resort is new territory to me. Also, not interested in DS as we have a late flight out on the 30 and will spend the day at DS then.
P.s.- only using Disney transportation so bonus points if you can keep it generally easy to get to!!
 
Mini golf is the only activity that comes to mind, if swimming and Disney Springs are out.

After you arrive, you could bus to MK and ride the monorail around and check out the monorail resorts and stores. Then come back and swim, and your room should be ready somewhere around then so you can get cleaned up after for dinner. From CSR, I would bus to DHS and then take the boat to BC.

Alternatively, you could swim when you get there and then ride the monorail around later in the afternoon. At 4pm, Trader Sam's opens at the Poly which is the perfect time to get there. Its a fun experience for all ages. You could then monorail back to MK and hop on the bus to Beach Club for dinner.
 
That sounds like an excellent time to check out the Mini Golf courses!! I would recommend planning to take an uber/lyft if you don't have your own car. Trying to take the Disney Buses can be extra time consuming.

To get to Fantasia Gardens mini-golf, you would have to take a bus to DHS and then either walk or take the boat to the Swan/Dolphin and then walk across to the golf course from there. If you take this route, then you can just walk over to Cape May Cafe from the golf course.
To get to WinterSummerland mini-golf, you have to get to Blizzard Beach and then walk over from there. There may or may not be direct buses to Blizzard Beach at that time.

Excellent ideas (I like the monorail resort thing as my DD loves the Poly and has never been to trader Sams) and thank for the transportation advice. I did not know we could walk from mini golf to Cape May.
 

One other transport option. I might take the bus to AKL and then the bus to Swan/Dolphin if you do not want to use a car.

Mini-golf is fun. There are also activities at the Boardwalk, including surrey bike rentals.
