Recipe help -- Boma butternut squash soup

Have any of you made this recipe? I don't know, but 11 ounces of squash seems like an awfully small amount, but the 3 ounces of butter is a LOT. I actually doubled it because I had 21 ounces of squash. I melted the butter and poured it over the squash and now the squash is swimming in butter. :lmao:

Any advice?
 
Okay, soup's done -- I hope nobody makes the same mistake I did and actually tries this recipe.

It's watery and bland. I've been adding more seasonings, but nothing helps. I give up. :lmao:
 
has anyone ever made this with any good results? This is my fav thing to eat at wdw! This is why we do AKL CL LOL they have the yummy soup....I would love to try this, and what is "slurry" by the way? It says slurry the cornstarch, I hate to sound stupid but I have no clue...

Slurry is just taking the cornstarch and mixing an equal amount of cold liquid (in this case I used water), then whisking it into the hot soup. It thickens it.

Okay, just to let you know that I'm trying to rescue this attempt. I know everyone's waiting with bated breath! :lmao: Anyway, I started adding more spices, but then looked up a recipe for pumpkin pie because the spices are so similar.... well, pumpkin pie calls for a whole lot more sugar. I added about half a cup of sugar and voila! That did the trick with the spices. I'm now cooking more butternut squash in the microwave to puree it and thicken the soup up. I'll let you know how that turns out. But right now it's tasting very close to the real soup! Just watery.
 

Hope you are taking notes as to how you are "correcting" the recipe! I love butternut squash soup but never make it at home, as my family won't even consider it. But I told them that this winter we were going to start having soup and crusty bread night - we are trying some new recipes! They might end up a little hungry a few nights (only if they refuse to try new things) but ... we need to add some menus to our repetoire! :goodvibes

I was saying the same thing today. I want to try a new soup every week starting after labor day. My friend told me she bets it'll last one week, but now I want to prove her wrong. :laughing:

The soup ended up being okay. It took a LOT more sugar than the recipe called for, and a lot more butternut squash. The flavor of the other spices didn't really come out until I added more sugar. I shudder to think how many calories was in a bowl of that. Both kids enjoyed it -- the oldest took a big bowl home with him.
 
Trader Joe's has a wonderful all natural butternut squash soup in a box. Love the stuff!

Ah, we don't have one of those around us. Is the soup sweet or savory? The one I just made is like drinking hot pumpkin pie.

BTW, I always notice your tag about Kiawah Island. I used to go there in high school with a friend who had a beach house. Fond memories of that place. It's so beautiful!
 
Au Bon Pain has a great butternut squash soup, too, if you have one of those near you. I've never made it before, but I love the ABP version.

The soup is the perfect mix of flavors...the sweetness of the squash comes through, but not overly so. Not sure which category it should go in, probably savory.

The tag has to get changed in a few days...summer is almost over. :sad1: Hope you get to visit KI again sometime.
 
I asked Boma for their recipe, made it and it was DELICIOUS. They'll give it to you. :thumbsup2
 
I made it once, several years ago. I thought it was way too much butter. I also remember adding more sugar to taste.

I haven't made it since, but next time, I'll cut down on the butter.

I didn't realize you had used the Boma recipe, since I didn't check the one I have. I got it in 2007 and I don't suppose it's changed. I swear I followed it to the letter and it turned out exactly like the soup at Boma. :stir: I know because I'm addicted to that soup. :cloud9:
 
That same soup is also at Mara-and it's every day, whereas at Boma, it's only offered some days, I think. I think it tastes slightly better at Mara, but that's probably only because it costs less! It's supposedly from the same kitchen. I had a free sample at Boma one night during a tour, then I went down to Mara and got it. Yup, same soup, only like Isaid, slightly better when it comes time to pay.;)
