Realistically speaking - what Disney Springs restaurants have best chances of getting same day reservation using Open Table? (details in post)

Will be there in May 2020 (first two weeks).

Two people, for dinner, after 7 normally. Looking at Morimoto, Boathouse, Homecomin', Jaleo, or maybe one of new Italian places. Weekdays, not Friday, Saturday or Sunday.
Think we'd be in luck w/same day reservations?

Or make a couple reservations through Open Table the day before for where we think we'd want to eat and then cancel as needed?

Looking for those who have tried this, thanks!

Day before reservations, given your party size, good odds on OpenTable. Same day reservations I would say mixed luck. 7 pm is prime time dining reservations so flexibility is your friends.

Something I just discovered is Homecoming is currently only available through WDW ADR system.

I got Morimoto lunch and Boathouse dinner same day, I saw the Italian places available too. Homecomin’ and Jaleo might be more tricky.
 

I looked for 7pm reservations on Friday for this past Saturday at some of those Disney Springs places for 4 people, when my DS announced he wanted to eat at Disney Springs (I had originally thought we would just do a QS in Epcot). I found a whole bunch of reservations around 5:30-5:45 and then 8:30-8:45, but 7 pm were slim pickings. I would try to reserve at least a week in advance or plan to go early/late. We wound up having a very late lunch at SWGE, and decided on just appetizers at Jock Lindsey's (which is more like a bar and doesn't take reservations). It worked out well, because we were not looking for a full meal.

I would imagine that mid-week, there would be more options available.

Granted, it wasn’t 7pm, but we walked up to the hostess stand at the Boathouse at 4:30 on a Friday with no reservation and got seated immediately with no issue.
 
Rarely have we had trouble getting an ADR at DS at any restaurant, but we are only a group of 2-4.
 
I got a Boathouse res for 2 outside on the water on OT less than a week before out Spring Break trip. Its a big place, which helps
 
There is no harm is making reservations on Open Table because you can cancel them the same day without penalty if you decide not to go. We had reservations at Boathouse at 8 pm on a Thursday, and for people that did not have reservations they were being told the wait would be an hour.
 
We used opentable almost exclusively during an adults' only December holidays trip that lasted 20+ days. With the exception of Christmas Eve and Day, and New Year's Eve, no longterm reservations were made for that trip and I cannot think of a DS restaurant we weren't able to get a same day opentable reservation or walk up. I would guesstimate that 80% of our meals were at Disney Springs.
This strategy was a game changer for us and we've booked in that manner for the 2 subsequent trips we've taken since Christmas. As things stand I'll never go back to hovering around my keyboard til all hours of the night. I still need to book resort and park eateries thru Disney so I just pick the hard ones to get like CG brunch and wait until after we have FPs to get the others. Easy peasy and stress-less too.
