I have a 7 night stay coming up in May and I am arriving late the 1st night. We want to go to Sea World this trip so I was thinking of doing it the first day and splitting my reservation into 2. One reservation would be 2 nights and the next would be for 5 nights. I want to split the reservation and only do the dining plan for the 5 nights. I don't want to pay for 2 days I won't be eating any meals at the park. Member services told me I can make 2 reservations but I would have to check out, change rooms and check back in. Has anyone experienced this?

Yes we have done this and yes you will have to officially check out, and check back in to get the new keys with the Dining plan on them.

As to whether you will be allowed to stay in the same room, as long as both reservations are for the exact same room type, then you might be allowed to stay in the room and simply go the desk and check in for the new reservations.

There is no guarantee you won't have to move out and move back to another room. It is up to the resort.

You can ask MS to link the two reservations together and that will help, but ultimately the front desk at the resort makes the decision.

Be sure to mention it again at check in and see what the options are.

I think if MS links the two reservations together the OP will have to buy the DDP for the whole time because they are now one whole reservation.

All reports are that it is very rare to have to change rooms. Just have it noted on the reservation that you have a continuing reservation and let the front desk know when you check in.
