My daughter is obsessed with this dish. After filling out the recipe request card 4 times on various visits, they finally sent it . . . but it's just the core ratatouille recipe, not the sauces or quinoa. I'm sure we can figure out the quinoa, and the pesto drizzle is pretty obvious, but it would be helpful if we had a clearer idea on the style of red sauce on the plate around the ratatouille. It's not straight tomato, not cream of tomato either since this is plant-based, so maybe tomato pepper? Ideas?
