Ratatouille recipe Chef de France

My daughter is obsessed with this dish. After filling out the recipe request card 4 times on various visits, they finally sent it . . . but it's just the core ratatouille recipe, not the sauces or quinoa. I'm sure we can figure out the quinoa, and the pesto drizzle is pretty obvious, but it would be helpful if we had a clearer idea on the style of red sauce on the plate around the ratatouille. It's not straight tomato, not cream of tomato either since this is plant-based, so maybe tomato pepper? Ideas?

What are the ingredients, if you don't mind? My son is a vegetarian who doesn't eat mushrooms, eggplant, or coconut, and it's not easy to find out in advance if any of that is in the only vegetarian dish on a menu. Thanks.

Eggplant is a main ingredient in Ratatouille.

The manager replied back and said the sauce recipe is for a very large batch but consists of
Whole Tomatoes,
Ketchup,
Onions,
Green Pepper, (maybe ripened?)
Olive Oil

I’ll be honest. I’ve never tasted WDW’s version of ratatouille but pretty sure I’ve never had it with ketchup (!?!) as an ingredient.
The addition would certainly add a sweet taste to the recipe.

I'm also obsessed with Chef's de France's ratatouille. When I had it, it wasn't at all like the recipe I see above-nothing was sliced. It had eggplant, kale, and quinoa, and it came stuffed in a large tomato with tomato sauce. I'd love to see the recipe. However, I don't think I'd have the skill to stuff it inside a tomato-I'd probably just put some sliced tomato on top.
