So our stay is arrive Monday, leave Saturday.
We are going to the parks 4/5 days - so how many days of the dining plan will we have?

Your dining plan is based on the number of nights you are staying...not days in the parks.
So if arriving Monday, leaving Saturday, you are staying 5 nights therefore 5 qs credits and 5 ts credits if you have the DDP.

Also, you may start using the credits as soon as you check in and until the end of the day you check out.
