it depends what time of the year you are going. We normally go November time and yes sometimes we may have to wait an hour for our 'Evans party of two you adventure is about to begin' call, sometimes we have only waited 5 mins. But I suspect that at more hectic times of the year you def will.:)
 
We were at Downtown Disney last Saturday night and had a 7:00 pm reservation. When we got there the wait was about 2 hours for walk-ins.

One thing I learned was that you can make a reservation by calling the restaurant directly rather than through Disney. Even though we weren't going to Disney on this trip (first time to Universal instead), for some reason I just called Disney Dining to make a reservation. Maybe force of habit? :confused3 Anyway, about a month before our trip I was told by Disney that the only time available for a party of 4 was at 10 pm, but when I called the restaurant directly perhaps two weeks prior to the trip, they said the entire evening was open. The woman who took my reservation said Disney only gets a small number of their available spots to fill. So my suggestion is if you think you want to eat here, make a reservation. You can always call later and cancel.
 
on a number of factors. An early dinner you could have a short wait. On the weekends during heavier seasons and around 7:00, I have seen the waits past an hour.

If you become more comfortable with when you want to go closer to the time you can call the restaurant directly. It's usually easy to get a time. We have finished our shopping early and were let in 30 minutes prior to our reservation time before.
 

I would assume during free dining it shouldn't be a problem getting in as a walk up since they are not a part of DDP. That being said, we have only ever walked up to the one in AK in May and end of September. We didn't have a problem with either.
 
When my family and I would go to their location at Downtown Disney Marketplace it would usually be for an early dinner between 4:00 PM - 4:30 PM so we could avoid any long waits. Well we were always seated right away and never had to wait for our name to be called.
