Quickie September Trip advice

So I just found out I'll be attending a professional development workshop in Orlando September 23-24. Of course, I'm thrilled that this gives me a chance to make another quick visit home! And I'll be flying solo, which is fun! The conference hotel is sold out so I guess I'll just have to stay on property instead. Aw shucks!

The workshop is Monday and Tuesday. I'm thinking I will fly down Saturday to have a full day of fun on Sunday. I have some very old, non-expiring tickets I can use up on this trip. The only issue with that is I don't think I'll be able to book any FPs until I arrive in the park. So here's my thinking for an itinerary:

Saturday afternoon/evening after checking-in: probably Magic Kingdom. EPCOT is open later but I think you want to avoid the Food and Wine crowds on the weekend, right? Maybe go to The Wave for a late dinner (I've had good luck there getting a seat at the bar).

Sunday: Studios for AM EMH. Maybe check out the Tap House or Brown Derby Lounge for lunch. I made a late dinner reservation at Narcoosee's to hopefully see the 10:15 Hallowishes. Perhaps do a monorail pub crawl before dinner.

Monday: thinking about just going to AK Resort (after the workshop lets out at 5pm) for a nice dinner. What are my chances of getting a bar seat at Jiko (Cape Town Lounge) or Sanaa?

Tuesday: EPCOT is open until 11 with PM EMH so that seems like a natural. I can get there by 5pm (workshop ends at 4) so that's a solid 6 hours.

Thoughts? Any potential landmines here? I'm a little sad to leave out AK. Depending on departure time I could maybe go Wednesday morning. But I hate to burn a ticket for a relatively short amount of time.
 
On your Monday - I'd suggest picking either Jiko or Sanaa or Boma NOW - and making an ADR. If it isn't what you feel like - cancel it the night before. If you do that - on Monday proper - try snagging what you want instead.

I don't know much about the Jiko lounge, but the Sanaa one CAN fill up. I've been there when its been full for some time a couple of times.
