Quick-Service Dining Plan

I'm in the VERY early brainstorming stages of a possible trip with my boyfriend in October. If we go, I'm looking at the quick-service plan as a possibility for us. The theory would be that we'd do mostly quick-service, and a couple out-of-pocket sit-down meals (probably signature places) for dinner- maybe California Grill, Jiko and Artist Point. I'd normally plan more Epcot meals, but since we'd be going during the F&WF, it might make sense to plan on using extra snack credits for the booths and snack our way through a meal instead.

What do you think? Would this make sense for two twenty-somethings? We'd probably stay 5 nights or so.
