They could be low-carb, low fat, Weight Watchers...combos, whatever.

Hi Jen,

One of my favorite quick meals is -

Quesadilla-
two whole wheat tortillas (5points)
30g FF cheddar cheese (1pt)
avacado - varies in points (3-5.5 points)
green tomatillo salsa
I mix the tomatillo salsa with the avacado. I put a small amount of avacado in the quesadilla.
I spray a very small amount of olive oil in a pan and cook till lightly brown on each side.

Sometimes I eat it without the avacado, especially if I'm making it for lunch and need less points. Its so fast to make and its my easy standby.

I eat this usually 2-4 times a week.
 
I have been hooked on egg salad sandwiches lately...

I smash 1 whole egg and 1 egg white, mix it with a small amount of FF mayo and mustard, add some diced celery and eat it between 2 slices of toasted whole wheat bread (no butter).

Another good one I haven't done in a while is a turkey roll. Take a whole wheat tortilla, add some mustard and a couple slices of turkey lunchmeat, roll it up and eat it.
 
Jen -- If you like crisp breads, here is what I had for lunch:
4 kavli crisp breads (2)
spread 1 wedge of laughing cow swiss over the crisps (1)
top with low fat turkey slices, 1 oz on each (1)

If I'd had tomatoes at work, I would have put sliced tomatoes on top, salted them and then had 4 open face turkey & swiss crisps.

Another favorite recently:
2 lite english muffins (3)
spread with light marinara sauce (.5)
sprinkled with fat free shredded mozzarella (1-2)
season with a little oregano or other italian seasonings
you could also top it with ground turkey or turkey pepperoni

What kind of cheese do you purchase? I swear I looked at the nutrition information on every cheese in my local grocery store and really couldn't find anything other than sliced that was fat free. All of them seemed loaded with fat & calories.
 
I like to try & cook things in advance and freeze them, so that I have easy meals available. Earlier this week, for example, I made a big pot of turkey chili (my first attempt, and it came out pretty good). I figure it's about 4 points per cup. I left some in the fridge to take for lunches this week, and froze the rest. For lunch today, I made a green salad (0 points) and then topped it with 1 cup of the chili (4 points) - so much better than just another boring salad!
 
Chicken & Salsa

Chicken breasts
Salsa
Black Beans
Shoe Peg Corn (canned)
Layer salsa, beans, and corn over chicken. Bake at 350 for 1 hour or put in Crock Pot on Low for 6 - 8 hours. This is 5 points and so good!
