Ok, all since the response to the crock pot mac n cheese showed definite interest in quickie recipes I thought I'd share one I made up over the weekend.
About 2:30 Sunday afternoon DS walks into the house and my work room saying, "I need to know right now if the guys can come over, if not I have to call them at their houses and tell them no." The guys meant another 4 teenage boys. Nothing going on so no problem say I.
Uh-oh. I then find out that although they had all been at our church picnic (I wasn't as DD had a pile of homework that she hadn't been able to start until after church Sunday) they had been put to work and by the time they got to the food it was gone! Not a good situation with 16 & 17 year old boys. So time to figure out food and not just a snack.
This is what I made:
Quick Chicken & Rice Casserole.
Cut boneless chicken breasts into cubes (I used 4 and thawed just enough to cut)
Pour about 2 Tbs. of olive oil into a large pot and saute until the chicken is cooked to the point of no longer being pink inside
Add 2 cans (14 oz each) of chicken broth and bring to a boil
Add 4 cups Minute Rice and 1 bag of frozen broccoli (it was partially thawed from sitting on the counter while I worked with the chicken).
Return mixture to boil, remove from heat and let sit about 10 minutes until moisture is absorbed. Stir occasionally and when complete.
Add 2 cans of Cheddar Cheese soup (do not dilute)
Stir and serve OR put in crock pot on low until ready to serve. I did the latter and found the ingredients were a little more solidified. This served the group of 8 teenagers I had in the house until they were full as well as leaving some for DH & I to eat when he came home from work!
