Quick ADR Question

Help! I'm totally new at dining reservations for WDW. We go to Disneyland all the time and it is very different.

We have free dining for this September and I want to make our ADRs as soon as we can. We can book on June 25. There are a total of 10 people on three different reservations (all on site). Do I need all three reservation numbers to book for the 90+10? Do all restaurants require a credit card to hold? We're planning to dine at Captain's Grille, Crystal Palace, and Coral Reef. I want to make sure that I can reserve for the duration of our trip (only 4 days/3 nights).

When we did a group of 10 I made all ADR's we had 3 rooms. No CC hold on the ones you have picked.
