Questions on when to attempt each park

We will be staying at HRH for one night and using the express system with early entry for our two days at the parks.

We are staying at disney for our first 5 nights and universal our last night before traveling home.

Here is my question, since we will check in around 10am for our one night stay and we actually leave to travel home around 4pm (for mco airport) how would someone recommend attacking the parks?

My initial thought is this: Day of stay is July 13th (hopefully with late checkout)

1st day:
Expected check in 10am
Pick up tickets with express pass (not sure if we do this at hotel or at the parks)
Go up to room (if available)
Then head to pool for an afternoon swim.
Get showers and head over to the universal studios around 5pm.
Since the park is open till 10pm I think we should easily be able to ride each and every ride we like using the express passes.

2nd day:
Head over to IOA in time for early entry.
Hit the WWOHP
Then work our way around the rest of the park (Since we don't have any young kids with us.. youngest son is 14) I don't see suess land in our future.

I would really like to do all the water rides before heading back to the hotel at 3pm to change (either in late check out room or hotel restroom) and then leave by 4:30pm to travel home.

Does this sound like the correct way to do things or would you suggest switching things up?

The other idea I had was to skip the pool and head straight to the water rides in IOA before going back to the room to change for dinner and Universal Studios. I would still want to try the pool at night or sometime during our one night stay.
 
Well....you do know that you get early entry into WWOHP when you stay onsite. I'm not sure how it works now, but you used to be able to check into your room early and grab your room key. They would tell you the room you would be in, you just wouldn't be able to access it until check-in time.
I think you're underestimating the parks and will regret not spending enough time there. Two days anymore is not enough to see everything. They will have Despicable Me open by then, plus a new parade and nighttime show. Rides like Forbidden Journey and Rockit do not have Express access...so you'll be waiting in line for those.
You definitely have the right idea of seeing Islands first...but I would give yourself more time, personally.
