questions from first timer

We are considering a trip to Universal over the long MLK Jr. weekend in January 2013. Having never been to Universal, how many days would you estimate we'd need to see everything? Do you think it will be crowded due to a holiday weekend--I had read online that January is typically slow but an online crowd calender rated this weekend as "busy". We would stay on site for the early entry and FOTL passes. My girls are most interested in the Harry Potter area but want to see it all.

My 8 yr. old DD has food allergies to egg, wheat, tree nuts. Disney is incredible with making food for her. How about Universal? Any ideas on how they can accomodate her or if we'll be able to feed her safely in the park?
 
Jan is usually slow, but MLK weekend is Busy.If you want to see both parks and do it all I recommend 2 days.Not sure about dietary issues.I am pretty certain they are just as accomodating
 
If you are staying on site, two days is plenty to see everything during a crazy weekend like MLK.
 
To get the most of the parks I would stay onsite and take two park days to see everything without having to rush.

It might be too cold for marathon open to close park days, Jan can be such a toss up as far as cold weather is concerned.

ETA: My DH has a food allergy and we've found Universal/City Walk's Table service to be just as good as Disney. DH's allergy is shellfish though so it's easier for eating counter service than your DD's may be. If there's a question DH will just grab a hot dog kwim? You could contact them and ask how to handle her allergy at quick service restaurants.
