Questions!!! First Disney and universal trip in over 15 years!

I have several questions.
Disney: does anyone know if Goofy's candy company make your own creation will let you use a DDP snack credit?

Universal studios: we do not do Harry Potter at all and don't plan on going to that area. There are a lot of the rides I loved before gone now :( is universal still OK on the regular side or would you say with out the Harry Potter aspect it would be a partial day park side? I know islands of adventure will be fun and a full day, but just asking about the original side.
 
I think there's still a lot to do, but not necessarily enough to fill 12 hours. By not going into wizarding world, you're eliminating some really cool rides that people appreciate without being HP fans.

As for universal, it depends on the time of year for how quickly you will move through the universal parks. In my opinion, one full day for each of the parks is too much especially without WWOHP. You may like part of Hogsmeade because Dragon Challenge (formally known as Dueling Dragons) was there for years before HP took over. It depends on if you ride some rides multiple times. You can make a full day out of each park but if you're typically riding a ride once and not going back, you made have a tough time filling the day.

My mom can not walk very far on her own and will be in an electronic chair. She and my Dad don't plan on getting there when the park opens, so it will give us time to do the crazier rides and then be with them during the shows. We plan on eating dinner in a Disney resort those days as well so this actually will work well for us nor having it be a really full days stuff.
How are the crowds the last week of April typically?
 
In my opinion, as soon as you clear Easter and Spring Break, the end of April and the beginning of May are very nice times of the year. I see no problem with you seeing everything you want to see in the parks and still making it back to Disney property in time for dinner. Besides, I think Universal closes a little earlier around this time of year.
 
There are a ton of cool attractions at Universal Studios besides the Harry Potter attractions. The Simpsons, Minions, The Rocket Coaster (or whatever it's called), The Mummy, E.T. (if that's your bag), Men In Black...
