How do you find out when the early openning and late closing for the parks will be for guest staying onsite. I was curious because i need to book reservations for the dinning plan I got.

The WDW website, www.disneyworld.com has a calendar section. You can look up regular park hours during your trip, and also any early or late days at each park.

I'm not sure I understand your question. You can choose whichever ones you like. Some parks are historically busier than others on particular days, but this may not be the case with your timeframe. I chose a day I thought would work best for me and made the reservations accordingly. Sunday we have California Grill reservations because it seemed like a good time. Same thing with our reservations at EPCOT for Friday night.
