Question regarding booking for a week

On previous vacations to WDW we have purchased points from DVC members for 5 night stays. This trip we are considering staying an entire week. I have noticed that the point chart for resorts has a weekly rate that gives us some savings versus 7 nights individually. My questions is this: If I purchase a week's worth of points for a resort, is there a standard time frame for this week (Sunday to Saturday for example), or can I check in any day and check out 7 days later?

I'm sorry but that is not the case.
There is no "weekly reservation" in DVC, when you book, each night has a cost and summing all the cost will give you the cost of a week. The weekly rate on the points charts are just a commodity, to have a quick look for the cost of a week in a season. But if your reservation spans two seasons, none of the weekly rate applies, you have to see in which season each night falls and sum up all the values.

Plus, if you are crossing seasons during your stay, you must use the per night point charge instead of the "weekly" point cost. You don't get a discount for booking an entire week instead of just a few days.

Your stay can begin and end on any day of the week. For example, you could reserve a 7-night stay with a check-in date on a Tuesday and a check-out date of the following Tuesday.
 
What is the story with point charts where they end and the lines below are empty? I assume the numbers just fill in
I'm not sure I understand your question.

If you are referring to the amount of empty space in some parts of these point charts, the first column lists the date ranges for each season. Some seasons have more sets of dates in them than others so the height of the row changes based on the amount of data in that cell. The remaining columns in the charts for all resorts other than Aulani always contain 3 rows, showing the points per night for Sun-Thu, Fri-Sat, and the weekly total for nights in that season. Aulani's charts have two rows per season since all nights cost the same number of points. The points/night apply to all of the date ranges listed in the first column.
