snacks that are listed on Disney's site are:
Frozen Ice cream novelty, posicle or fruit bar
Popcorn
single piece of whole fruit
single serving grab bag of Frito-Lay chips
20 oz. bottle of coke, diet coke, sprite or 24 oz. Dasani Water
Medium fountain soft drink or apple juice
I have also heard of:
1/2 pint of milk
I have another list somewhere, but can't find it right now of what people have gotten to buy. I do have some samples just within the past few days that I have copied off the these boards on differant threads.
As far as snacks at the food courts at resorts, basically you can try just about anything. We really were able to get tons of stuff there that you wouldn't be able to get elsewhere. Maybe that's cause they don't really have the popcorn, ice cream stuff that is listed?

Main Street Bakery pastries are part of the counter service, the snack items are the drinks, rice crispy treats, etc. For counter service there I was told any 2 items plus a drink is counter service. But to me this was a rip off as normally you get 3 items - say your burger, the fries AND a dessert. So, we paid for this out of pocket for that reason.

no, but there are a few places (outside Dinoland in Animal Kingdom for instance) where the McDonald's stand for fries is included I believe.

yes, it includes shakes, floats, fancy drinks like Hoist the Flag, etc. If the drink normally has a refilll like the shakes at Whispering Canyon Cafe, or a coke, than you get refills. If not normally a refillable item like the Hoist the Flag at Yacht Club Galley, or the Coke Float at 50s Prime Time Cafe, than no refills.
From what I've read hear a dessert at breakfast has been a
bagel, danish, fruit cup, etc.

We got zuchinni and banana bread as both snack and dessert. Danishes, fruit cups/bowls, cookies, rice crispy treat Mickey's, and OJ or choc milk were also things we got as snack/dessert at the resort.
I would specifically ask each time if coffee is covered at the particular place you are at and make sure it is as a snack - not a cs credit.

when you get the check you get one that has all the items, costs, etc - this is the restaurant copy. so you do see the figures-- but the copy you take with you doesn't have any $$ amounts- When you check out, you will get a detailed bill of your expenses which is nice to see so you know how much money you did save!
Smoothies have been drinks, but not soda with the light up ice cubes. Appetizers- some have been able to get a multi-person sampler platter for just one person, some have not. Same with desserts. Some have gotten the dessert sampler, even some got the fondue, while others have been only given a "single serving" type dessert.
We had the Candlelight Processional package at Alfredos last year, we were allowed to get the dessert sampler, which runs about $9, but only 1 for 2 people.

Counter service for breakfast -non platter main course (pancakes say), side dish (sausage) and drink (soda, oj, milk, juice box, or choc milk) and dessert (quick bread, danish, bagel, fresh fruit cup, yogurt - in some places- cookie, rice crispy treat, piece of fruit)
So, for counter service you get a main dish and side, sometimes this means all together like we did the platter that had the scrambled eggs, fried potatoes, biscuit, sausage, french toast piece and bacon. Sometimes it's a main item and a side item like we did one breakfast the kid's pancakes with sausage on the side.
