Question about half-board premium and DLP restaurants

Hi all, I'm a complete Disneyland Paris newbie, this will be my first trip!

I booked the "half-board premium" meal plan, and on my receipt it says I will get "Half Board - Premium - 2 vouchers per night for each
guest above the age of three" - but on the DLP website under meal plans, it says "Simply pick the half-board Meal Plan suitable for the restaurants at your hotel and that meets your needs and matches your budget. You'll then receive one meal voucher per person, per each night of your stay on check-in at your hotel."

So... is it two, or one? And if its two, does that mean I should make two reservations per day, or can I walk into restaurants and expect to find a table?

What restaurants are must-do's?

Thanks for any advice! I totally know how to plan for a Walt Disney World trip, but planning for an unexpected Disneyland Paris trip is a whole new experience!
 
Its one table/buffet service meal voucher per person per night booked plus one teatime treat (drink and a pastry) per person per night booked.
