question about food and tickets

My aunt is paying for my parents to go on a cruise next year. Since my mom is gluten free, can't have pork or cows milk along with bananas. Is the person who books the tickets also as to say how many in the group has food allergies? I don't know how to word this well sorry if any of you have trouble understanding what I mean.
