question about dining after checkout

We are going to WDW in September. We are leaving the Orlando airport at 5:00pm but I know checkout at the resorts is around 11. We are going the 22nd - the 29th. My question is, if we want to have breakfast at Ohana the morning we leave can we still use the dining plan after checkout (we are staying at CBR) ? Also, since we have an 8 day park hopper are we still able to visit the parks after checkout. We have all day to keep busy while waiting for our bus to the airport. Also, what happens to our luggage when we check out. Do we have to lug it around with us all day?

Your dining plan credits are good until the end of the day you check-out, even after you check-out. So, yes, you can use them for O'hana and anywhere else that day if you have leftovers.
If check-out day is the 8th day of your parkhopper, you can use it that day all day too.
For luggage, the hotel will usually store it for you in their baggage area. If you have a car, you can just keep it in the car.

until 11:59:59 pm on your day of checkout, you still have access to
- resort pool
- EMH
- any unused dining credits (use up those snacks!)
- room charging

So is there a separate card for all of this. I thought your room key or card was what gave you access to all of this. Sorry for my confusion and ignorance but this is our first time and I have no idea how this works.

Also, if anyone has any recommendations for a place to make and ADR for dinner at MK both on the day we will be there and on the night of the MNSSHP which we will also be at I would greatly appreciate it

yes, you continue to use your key to the world / resort ID. you keep that. if you enable express check-out at check-in by providing a credit/debit card, you don't even have to go to the desk to check-out.

for my money, LTT is the place to eat dinner at on MNSSH nights (but eat around 5:30 or 6 if you can so it doesn't run into the party). Chef Mickey's at the Contemporary is also a great spot to have dinner at when in the MK area.
