Question about 1900 Park Fare

My husband and I are thinking of going to 1900 Park Fare for dinner. I looked at the menus online and it says on the carving station the beef has a horseradish sauce and the ham a cherry chutney... Husband is a fussy eater and he won't go here if the sauces are on the meats - anyone know if they are separate in a bowl or somehow 'touching' the meat?
