Queso Fundido

We had this as an appetizer at San Angel Inn and it was delicious. A real good reason to go back there in January. In fact, our entire meal was very good. Our server brought out the Queso Fundido and prepared it on tortillas for us. I'd get it just for me for my entree next time. Yum.

We've actually gone in to San Angel Inn mid-afternoon between meals and just made snack of queso fundido. It is that good!

Yep, it is delcious...and so is that huge plate of nachos...I make a meal out of them....yummy.

There is also a pork something or other...outstanding.

San Angel Inn is an excellent place for lunch or snack!

I agree!! We were there in June and also ordered the queso fundido as a snack to have with a few margaritas. It was delicious! The San Angel Inn was a nice cool break from the Florida heat.

Cheese, peppers and chorizo. Very tasty. It's scooped out of the dish onto tortillas and folded or rolled up to eat.

Queso Fundido & strawberry margaritas are now our meals of choice at San Angel. We've found the entrees to be disappointing at times in the past, but the Queso has always been delicious! Love the atmosphere of the Mexican Pavillion.

Oh yeah! Queso fundido is THE BEST!!!! There is a Mexican restaurant closer to us than the one in EPCOT that makes it as well (although I was first introduced to this wonderful treat at the San Angel Inn). YUM!

Here's the recipe if you want to make it at home:

San Angel Inn Restaurante
Mexico-Epcot
Quseo Fundido (cheese and Sausage Dip)
Yield: 4 servings

1/2 Pound muenster cheese
1/4 pound chorizo sausage
6 flour tortillas

Slice or grate Muenster cheese. Set aside. Peel chorizo sausage and cut into large chunks. Sauté in a small frying pan until nicely browned. Break up sausage into small pieces while browning and drain any excess fat.

Lightly butter an oven-and broiler-proof casserole dish. Arrange half the sliced or grated cheese in bottom of casserole dish. Top with cooked sausage and remaining cheese. Broil sausage and cheese until cheese melts and lightly browns.
Warm tortillas and cut into quarters. Spoon sausage-cheese mixture onto tortilla pieces and serve immediately.
