You didn't specify which cruise. However....on both 7 day cruises, there are 3 adult series, each with 3 programs. There is a cooking/wine series with a different chef each week. The wine talk stays basically the same. There is "The Art of Entertaining" which features things like napkin folding, plate decorating, etc. presented by
Disney Cruise staff. There is a Navigator series that deals with tours of the ship, how it works, etc. These are daytime events.
On the Eastern cruises, there is another adult series featuring a Disney person not usually affiliated with the cruise. We've had the gentleman who played Gaston on Broadway and a VP of Imagineering. (different weeks) Each gave 3 one hour presentations about different aspects of their joy. In return, they and their families cruised free for the week. These are obviously different each week, but very entertaining and educational.
In addition, all the evening shows are presented in an "adults only" format after 9pm. That means that the jokes aren't necessarily clean, and the atmosphere is very smoky even in the non-smoking sections.
During the day, there are lots of "family" activities also....games, contests, etc.
