Here is the recipe that won First Prize in the main course category of the Kankakee Daily Journal Cookoff Contest

Spare Ribs and Wild Rice


¾ cup Wild Rice
4 pounds pork spareribs
cut into 4 rib serving size
1 tablespoon prepared Pork Seasoning
2 cups V8 vegetable juice
2 tablespoons Worcestershire Sauce
Bottled hot sauce to taste
½ teaspoon salt
1 teaspoon pepper
½ teaspoon Thyme
1 large yellow onion
peeled and cut into 1 inch dice
2 cloves garlic crushed
2 tablespoon Grey Poupon or other Dijon mustard

Place wild rice in a large bowl and pour 6 cups boiling water over. Allow to sit 4 hours . Drain. Arrange rib pieces in a baking dish and sprinkle with pork seasoning.
Bake at 450 degrees for 15 minutes or until lightly browned. While ribs are baking, stir together all remaining ingredients, except rice. You may use as much or as little of the hot sauce as you want.
Using a large casserole dish with a lid, place half the rice on the bottom and then place half of the ribs on top of the rice, pour half of the sauce on top. Repeat layers.
Bake in a 350 degree oven for 2 hours stirring twice.
Serve with a warm loaf of bread and lots of napkins!

This sounds great and I'm printing it as I type. Question. DH hates wild rice. Do you think it will works as well with either, basmati, jasmine or regular long grain rice?

Whtas in prepard Pork Seasoning? I don't have that, and dont' know what that is.. for a tablespoon I would hate to buy something

Woud general purpose Aromat seasoning do the same thing...

ILUVDXL, long grain should work just as well, but you may want to wait until the second hour of cooking before adding it in. It may get too soft with two hours in the oven.

Cindy B. We use what is called BBQ pork seasoning but you could use lowerys seasoned salt and add a little paprika. Also you can use more or less seasoning on the ribs. I needed to put an amount in for the contest. But I actually use more when I make it here at home.
