Our first trip to Disney is coming up next month. Dh is anxious about cost. I've made some ADR but concerned about prices. I know its not cheap, but when they put the price at between $36.99- $59.99 for a meal, how do you know how much it will be??

You can look @ menus here on the DIS or allears.net to get recent prices. The range you see on the Disney site represents multiple restaurants - various meals - various times of the year - so you can't really tell from that.

At some times of the year, they raise the prices for fixed price / character meals - peak times.
 
If you have booked buffets, character meals or dining shows that are showing the price range, you could always call dining & give them your dates and ask them to tell you what the price of those meals will be during your visit.

A general rule of thumb for the restaurants with ranges is going to coincide with the resorts pricing. In other words, during value season at the resorts, in general, you'd probably see the the buffets priced at the lower end of the range. During peak season pricing at the resorts, you'd probably expect to see the buffets priced at the higher end of the range.
