Premium Dining Plan - Substitutions?

I'm busy researching menus, in preparation for making my dining reservations. I would really love to experience Bistrot Chez Remy, but none of us care for foie gras, which is the only appetizer choice on the Premium menu. Would we be able to get the salad from the Plus menu instead?

I'm thinking that because of the limited choices, we may have to skip it.
