We have cruised out of PC 3 times and done 3 different things. Cruise 1: Stayed at Marriott Residence Inn with a 2.5 yo. Flying in the day before. We took the hotel shuttle from airport to hotel, then the next morning took same hotel shuttle from hotel to airport and then took
DCL transfers from MCO to PC. I was worried this would be a lot to do in a 24 hour period but it wasn't a problem at all.
Cruise 2: Stayed at Sheraton in Cocoa Beach because we had a free room. They had an "airport shuttle" that we chose to use to get us from MCO to CB the day before the cruise. This was awful. We were late to get in and the service was just plain awful. The Sheraton was great once we got there but their shuttle was awful. The next day we took the Sheraton's hotel shuttle to the port. This took quite a bit longer too than taking DCL transfers. They push through the busses faster than non DCL shuttles because well, they can.
Cruise 3: We stayed at the Hampton Inn at MCO. Again, we had a free room. We took the hotel shuttle from MCO to hotel. The next day we took Happy Limo from hotel to port. This was excellent. We had 4 people in our party and it was about the same price after we got a booster seat and tip to take Happy Limo as it was to take DCL but we had my mom with us and it was easier. We really liked this option.
Personally, I liked staying at MCO because if a flight is late to get in or delayed then you can get to a bed faster. Yes, you have an hour drive the next day but I feel like you are more refreshed for that drive. Happy Limo was excellent and I'd use them again. DCL transfers were great too but you are waiting for the bus to get filled before moving and you have to get back to MCO the next day. Again, not horrible but not the most efficient either.
I know a lot of people that love the Hyatt and I'm sure its great but we prefer to save our money for fun things on the cruise and get a cheaper (or free) room.
