Potato Salad and/or pasta salad recipe?

I am having a small family birthday party for my soon to be 12 y.o. DS. I decided to keep it simple and ordered a 4 ft. grinder from a great italian deli. Anyone have any good recipes for salads to go along with it or have any other suggestions on what to serve with it? Thanks!

If DS doesn't object to vinegar (my DS does, but DD loves this) you might want to try this:
1 lb Tri-color Rotini, cooked (plain works fine, too)
1 jar 3-bean salad
1 jar marinated artichoke hearts, cut small
1/2 bottle Newman's Own Balsamic Vinaigrette Salad Dressing (Newman's Own Original works, too)

We've also done it without the 3-bean & put in shredded mozzarella, slivered pepperoni, chopped fresh tomatoes & stuff like broccoli.


I have one with angel hair that includes shrimp if you're interested. PM me if you want that one.
