Any tips on best place to get park hopper tickets?

We usually purchase our tickets directly through Disney.

Definetly get hoppers.....we always hop between the parks because the FP systems in each park are not connected.
 
We did 1st week of December a couple years ago. It was busy but manageable (we even dealt with the candlelight processional, no big deal). Pluses... Nearly everything is running (before refurb season, and you can see a whole area of the park that will be closing for a year or more), Christmas decor is lovely, cooler weather, and most schools are still in session so you don't have the big crowds of Christmas break. Minuses... It could be wet... But this is an El Niño year, so it could be wet until June!
 
Figment is very knowledgeable, so I know this was a mistake/typo. Just wanted to say that the Rivers and Train will reopen, it's the Ranch and Petting Zoo that are closing permanently.

February is supposed to be the least busy time of the year. It is likely you'll have closures. I'd say late January or early February is a pretty good time. The first week of March the water rides will likely down. They generally re-open just before Spring Break season.

The River & The train are closing but it is just temporary...agamble was clarifying Figment's statement which made it sound like they were closing permanently.
